Ingredients:

  • 1 cup of whole wheat (bulgur)
  • 1 1/4 lb. of ground beef
  • 2 cups of oil
  • 2 leaves of basil chopped finely
  • 1 tablespoon of tomato paste
  • 1/4 cup of raisins
  • 1 teaspoon of salt
  • 1 small red onion
  • 1 green pepper
  • Black ground pepper

Pastelitos

Ingredients:

For Dough

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3 tablespoons cold water
  • salt
  • 2 cups oil

For Filling

  • 1 lb ground chicken (beef, pork,or turkey)
  • 1 tablespoon oil
  • 1 tablespoon tomato paste
  • 2 leaves coriander, chopped finely
  • 2 teaspoons salt
  • 1 small red onion
  • 1 medium green pepper
  • ground black pepper (to taste)
  • green olives (optional)
  • raisins (optional)

Ingredients:

  • 3 lbs chicken
  • 1/4 lb cashew nuts
  • 6 slices ginger
  • 3 green onions
  • 4 ounces mushrooms
  • 2 garlic cloves
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 tablespoons sugar
  • 3 tablespoons red wine
  • 2 tablespoons margarine
  • 1/4 teaspoon chopped fresh thyme
  • 1 tablespoon vinegar
  • oil (for frying)

Mondongo (Tripe Stew)

Ingredients:

  • 2 pounds honeycomb tripe, cut into small pieces
  • 4 cups lemon juice combined with 8 cups cold water
  • 3 quarts cold water mixed with 1 tablespoon salt
  • 1 tablespoon annatto oil
  • 1 tablespoon corn oil
  • ¼ pound smoked ham, diced
  • ½ cup basic Recaito
  • 1 cup tomato sauce
  • 1 cup alcaparrado
  • ½ lb yautia, peeled and diced
  • ½ lb yucca (cassava), peeled and diced
  • ½ lb calabaza (West Indian pumpkin), peeled and diced
  • 2 green plantains, peeled and sliced
  • 4 bay leaves
  • ½ tablespoon black pepper
  • salt to taste
  • 1 cup canned garbanzo beans

Given the last post, it’s only right that I post this recipe. In fact, I’m surprised I haven’t before given it’s the national dish of Jamaica.

Ackee & Saltfish

Ingredients:

  • 1 Can of ackee, drained
  • 1/2 lb boneless salt cod
  • 3 tablespoons oil
  • 2 onions, sliced
  • 1/4 teaspoon dried thyme
  • 1/4 scotch bonnet pepper skin finely chopped up
  • 1 small tomato, chopped
  • 3/4 teaspoon tomato paste
  • 1/2 sweet pepper chopped
  • 1/8 teaspoon black pepper

Arroz Con Leche (Rice Pudding)
Ingredients:

  • 1 Cup Long Grain Rice (uncooked)
  • 2 Cups Regular Milk (may use whole or low fat)
  • 1 12oz Can of Evaporated Milk (approx 2 cups)
  • 1 14oz Can of Condensed Milk (approx 2 cups)
  • 1.5 Cups of water
  • 1/2 tsp Salt
  • 1/2 Cup Raisins
  • 2 Sticks of Cinnamon
  • 1/2 Stalk of Vanilla Bean (may substitute with 1 tsp Vanilla Extract)
  • Add beans from 1/2 stak of vanilla, or 1 tsp of vanilla extract to milk mixture.
