Ingredients:
- 1-1/2 cups of water
- 1 teaspoon. of salt
- 1/2 can of sweet corn
- 1 grated carrot (whole)
- 2 tablespoon. of corn oil
- 1/2 cup of chicken consomme (bullion/stock)
- 1 tablespoon. of cold butter
- 1-1/2 Cups of rice (washed with water)

Giambo
Ingredients:
- 1/2 lb. salted beef
- 2 quarts fresh water
- 1 ham hock
- 1 or 2 onions
- A few sprigs of parsley
- 1 or 2 carrots
- 1 bay leaf
- 1 celery stalk
- 1 lb. red snapper fillets
- 2 lbs. okra, washed and sliced
- A few sprigs crushed yerba di hole, or fresh basil
- 1/2 tsp. black pepper
- 1/4 lb. cooked shrimp

Sancocho is a traditional soup (often considered a stew) in several Spanish and Latin American cuisines. Variations represent popular national dishes in the Canary Islands of Spain, Ecuador, Colombia, Panama, Argentina, Venezuela, Dominican Republic and Puerto Rico. It usually consists of large pieces of meat and vegetables served in a broth. Similar dishes exist in other countries, such as Bouillon in Haiti. This recipe is from Panama.

Sancocho
Ingredients:
- 1 stewing hen (2-1/2 lb), cut in serving pieces
- 1 medium onion, chopped
- 4 Tablespoons cilantro, chopped
- 1 teaspoon dried oregano leaves
- 2 Tablespoons green pepper, chopped
- 2 lbs. ñame (Yams), peeled and chunked (potatos can be substituted)
- 2″ section of corn on the cob for each serving (optional)
salt to taste

Mangú is a Dominican traditional side dish served for breakfast, lunch or dinner. In Cuba, and parts of Africa it is known as fufu.

Mangú
Ingredients:
- 4 unripe plantains
- 4 tablespoons of butter
- 2 tablespoons of oil
- 2 large onions
- 1 tablespoon of vinegar
- 1 cup of cold water
- salt
Before Starting to Cook:
Peel the plantains and cut into 8 pieces.

Banana and Mango Bread
Ingredients:
- 1 cup Butter
- 1 1/4 cup Packed Brown Sugar
- 3 Eggs
- 3 cup Self-raising flour (self-raising cake/pastry flour)
- 1/2 tsp. Salt
- ½ tsp. Cinnamon
- ¼ tsp. Grated Fresh Nutmeg
- 1 ½ Mashed Ripe Bananas
- 1 Small Ripe Mango (mango should be peeled and pureed)
- 1 cup Golden Raisins
- ½ cup Chopped Walnuts

Jamaican Chocolate Cake
Ingredients:
- 1 1/2 cups Self-rising flour
- 1/2 cup Granulated sugar
- 1 1/2 teaspoons Baking powder
- 2/3 cup Water
- 1 teaspoons Mixed Spice (allspice?)
- 2 Cinnamon sticks (2?)
- 3/4 cup Margarine, softened
- 1/4 cup Dark rum
- 3/4 cup Superfine sugar
- 2 tablespoons Slivered almonds
- 3 Eggs
- 6 oz Semisweet chocolate, broken in pieces
- 2 tablespoons Unsweetened cocoa powder
- 2 tablespoons Hot Whipped cream

Cielito Lindo (Puerto Rican Taco Salad/Dip)
Ingredients:
- 2 lbs ground beef
- 1 package Old El Paso taco seasoning
- 2 16 oz.containers sour cream
- 2 15 oz. containers ricotta cheese
- 3 cups grated cheese - cheddar, Monterey Jack, any kind you like
- 1 16 oz bottle salsa (La Victoria - salsa suprema, mild)
- 1 7 oz.can Herdez salsa casera (You can substitute any bottled/canned salsa that you like.)
- 2 chopped tomatoes
- 1/2 cups chopped onions or scallions
- 1/4 cups chopped cilantro
- 3 cups chopped romaine Lettuce
